Tomato season is one of the most eagerly awaited times of the year for lovers of good food and fresh produce. This period, which usually lasts from late spring to late summer, is when tomatoes reach their optimum ripeness and flavour. During these weeks, markets and orchards are filled with fresh, juicy tomatoes, ready to delight the palate with their incomparable texture and balance of sweetness and acidity.
The tomato is a fruit that is highly dependent on climatic conditions to reach its fullness. The peak season coincides with the warmest months of the year, when the Mediterranean sun provides the perfect amount of light and heat for the plant to develop its fruit. During this time, tomatoes that are grown in a traditional and sustainable way are usually the tastiest, as they ripen slowly on the plant and are harvested at just the right time. That is why at the UniPro agricultural cooperative we have more than 200 farmer-members who are committed to an appropriate crop rotation that is complemented by an organisation of production, facilities and commercial network that allows our products to be present throughout Europe and our tomatoes to be part of the supply of our agri-food industry.
Unlike tomatoes produced out of season, which are often grown in greenhouses and harvested before they are fully ripe, seasonal tomatoes stand out for their intensity of flavour and natural aroma. Their texture is also juicier, and their thinner skin makes them a pleasure to eat in salads, stews or even on their own, with a little salt and olive oil.
During the season, we can find a great diversity of tomatoes that adapt to different culinary preparations. From the large and fleshy Valencian tomatoes, ideal for salads and gazpachos, to the small cherry tomatoes, perfect for snacks or decorative dishes. Also noteworthy are the pear tomatoes, ideal for sauces, and the green tomatoes, which are used in special recipes such as fried or pickled.
Each variety has its own moment of splendour within the season, allowing different gastronomic experiences to be enjoyed throughout the summer.
